CAPTURE OF THE FISH

In each fishing community, the fishermen develop different strategies for their fishing craft. In the location of Bucaro, the province of Los Santos, José Flores which, is known as “Pocho” by everyone, tells us how is their process from the moment of the capture to when they storage it in the cold inside the vessel:

  1. After the fish is caught, independently of fishing craft, the fish is put inside in a cold iced water tank.
  2. The fish is branded to recognize who executed the task (This helps to accurately set the distribution of the wage and to prevent conflict.)
  3. The fish remains less than ten minutes in the iced water and it is then placed in a tub with ice in which it dies.
